Grilled Pinapple and Brown Sugar Sauce

Just look at that picture!  Could you pass this up?  Try this grilled pineapple in brown sugar sauce.  Works with ice cream, pies (especially fruit pies), cakes (angelfood and pound cake), or anything else you can think of.  And it's fairly simple.  Here it is!

Ingredients:

  • (1) 20 oz. can Pineapple (for best results use slices)
  • 1 stick Butter
  • 1 C. Brown Sugar
  • 3 oz. Orange juice
  • 2 T. Cornstarch
  • 2 T. Water
  • 1/2 cup walnuts (optional)

Instructions;

--Drain the pinepple.  Dredge in brown sugar.  Grill until pineapple softens and caramelizes (be careful though...this will gunk up your grill!).

--Place butter, brown sugar, orange juice, cut pineapple, and pineapple juice in medium saucepan set on Medium High.

--Combine cornstarch and water in a separate bowl, mix until completely mixed and lump free.

--When the sauce reaches a boil quickly stir cornstarch mix into the sauce.

--After the sauce has reached a second boil, reduce to low heat. (Should easily coat the back of a spoon.)
