Doctorbeef's Kick-Azz Burger Recipe!!!
2 lbs ground round or chuck
1/2 lb. shredded mozzeralla
1 cup worcestershire sauce
4 tbsps curry powder
2 tbsps garlic powder
Salt and peper to taste
Take the meat, still cold, and gently fold in mozzeralla (handle as little as possible. Try to keep the coarseness of the meat). Form into 1/3 lb patties (approx 1-1.5 inches thick). Marinate for two hours in worcestershire sauce. Remove the meat, and season with curry powder, salt and pepper.
Take the meat (still cold), and place over direct heat on the grill. Cook to desired temperature (135-ish to medium rare). Remove from the fire about 7 degrees cooler than desired temp. Then finish on a high gas flame to reverse sear (this will cook the meat even further. The meat will also continue to cook after removal from flame).
Once the meat has a nice crust, remove from high flame. Then dress as desired (I likes a nice toasted potato bun, a nice garlicky aioli, avocado, lettuce and pickle).
