The best chicken sandwich I've ever come across. Here it is Earthlings!
Ingredients;
Marinated chicken;
4-6 chicken breasts/thighs (boneless)
16 oz bottle of Italian dressing
Kosher salt
Slaw recipe:
- medium carrot
- mayonnaise (1 cup)
- apple cider vinegar (1/4 cup)
- cane sugar (2 tbsps)
- fresh lemon juice (1/3 cup)
- salt and black pepper (to taste)
- 1 medium cabbage head
Start by dredging the chicken in kosher salt. This will help keep the meat moist, and better absorb the marinade. Then, marinate overnight in the Italian dressing.
The slaw:
Shred the carrot and cabbage. Combine ingredients, wet (mayonnaise, applie cider vinegar, lemon juice) to dry (salt, pepper, cane sugar). Blend thoroughly.
Grill the chicken as you prefer; I prefer using hardwood charcoal and oak chunks. Chicken may appear dark, but this is the carmelization from the Italian dressing. Cook chicken to an internal temp of 165 degrees.
Now you are ready to assemble. I prefer to use Hawaiian rolls for their rich sweetness. Pile on the slaw. I find you don't need an added sauce due to the marinade. Add cheese, pickles, tomato to your liking.
